Crisp cucumbers tossed in a sweet and spicy dressing.
Ingredients
2 tablespoons gochujang (Korean pepper paste)
2 tablespoons rice vinegar
1 tablespoon soy sauce or tamari
2 teaspoons honey
2 teaspoons toasted sesame oil
1 clove garlic, finely grated
1 teaspoon peeled and finely grated ginger
1 pound mini cucumbers, cut crosswise into 1/4-inch-thick slices
1/4 medium yellow onion, thinly sliced (about 1/2 cup)
2 medium scallions, thinly sliced
Toasted sesame seeds, for garnish
Instructions
Whisk 2 tablespoons gochujang, 2 tablespoons rice vinegar, 1 tablespoon soy sauce, 2 teaspoons honey, 2 teaspoons toasted sesame oil, 1 finely grated garlic clove, and 1 teaspoon peeled and finely grated ginger together in a large bowl.
Add 1 pound sliced mini cucumbers, 1/4 thinly sliced medium yellow onion, and 2 thinly sliced medium scallions. Toss together until all the cucumbers are evenly coated with the dressing. Garnish with toasted sesame seeds.
