There really isn’t another dip like blue cheese dip. Not only can you dip vegetables (and even fruits!) in it, but it’s also a totally delicious pairing for Buffalo wings. Blue cheese dip, like many dressings, is usually made from a combination of sour cream, mayonnaise, and lots of crumbled blue cheese. From there, different spices and seasonings like garlic powder, pepper, and lemon can add flavor dimension to the dip. Know that the bluer the vein in the blue cheese, the bluer the tint the dip will take on (not that it stops me from buying the richest-colored-veined block). For me, a pinch of sugar is essential to mellow out the blue cheese just a touch.

Ingredients

  • 1 medium lemon
  • 1 small bunch fresh parsley
  • 1 cup sour cream
  • 2/3 cup mayonnaise
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper
  • 8 ounces blue cheese
  • Assorted fresh vegetables, fruits, or crackers, for serving

Instructions

  1. Prepare the following, adding each to the same medium bowl as it is completed: Finely grate 1 1/2 teaspoons zest from 1 medium lemon. Juice the lemon until you have 2 teaspoons. Pick the leaves from 1 small bunch fresh parsley and finely chop until you have 2 tablespoons; chop more for garnish if desired.
  2. Add 1 cup sour cream, 2/3 cup mayonnaise, 1 teaspoon granulated sugar, 1/4 teaspoon garlic powder, 1/4 teaspoon kosher salt, and a few grinds black pepper. Whisk until smooth and combined.
  3. Crumble 8 ounces blue cheese (about 2 cups). Reserve 2 tablespoons for garnish; add the remaining to the sour cream mixture. Gently fold together with a flexible spatula until the blue cheese is evenly distributed. Garnish with reserved blue cheese and parsley. Serve with vegetables, fruits, or crackers.
